Jordan’s Best Chicken Sandwich:
Time: 15 min
Serving: 1–2 (depending on how hungry you are)
1/4 chicken breast, sliced into 1/4″ thick slices
1/2 tsp Mrs Dash Garlic & Herb Seasoning Blend
1/8 medium red onion
1 tbsp grape seed oil
1 loaf sourdough bread
4-6 basil leaves
3 slices of Swiss or Gruyere cheese
2 tbsp mayonnaise
smear of Dijon or grainy mustard
1 piece of green leaf lettuce
2–3 tbsp of Jordan’s Cranberry Jam
Heat grape seed oil on medium heat. Add thinly sliced red onion to oil and fry for 2–3 minutes until starting to brown. Push onions to one side of the pan and add chicken breast. Sprinkle Mrs. Dash seasoning on the chicken and flip to cook 2–3 minutes on other side. Take pan off heat and prepare the bread.
Cut some good quality bakery sourdough bread into 1/2″ thick slices. Smear mayonnaise on both sides of the bread. Add Dijon mustard and Swiss (or Gruyere) cheese on one piece of bread, and Jordan’s Cranberry Jam and basil on the other piece. Arrange chicken* on top of the cheese. Top the chicken with the fried onions, slices of avocado and lettuce.
* substitute sliced roast turkey for chicken during the holiday season.
Pro tip: How to choose the ripest avocado
Generally speaking an avocado is ripe (depending on the variety) when the avocado shell is a little bit brown and tender but not mushy to finger pressure. For an extra sense of well-being when buying, often expensive, avocados, pick off the stem—if it’s bright green underneath it’s good to eat, and if it’s brown or black put it back. 🙂
