BBQ Jam pizza Recipe!

So you might be asking yourself: What is BBQ Jam?

Thanks for asking.

Jordan’s BBQ Jam is a tomato-based spicy, sweet, savory jam-like spread.

The ingredients are: local BC tomatoes, onion, garlic, brown sugar, organic sugar, organic molasses and Jordan’s 13-chili spice mix.

Then you might be asking yourself: what can I use it for?

  • BBQ of course—apply last 10 minutes of barbecuing (meat &/or veggies)
  • serve with cheese & crackers for a charcuterie plate
  • make huevos rancheros (eggs Mexican-style)
  • spread between layers of cheese in a grilled cheese sandwich

Something we tried over the weekend is pizza!

Things you’ll need:
bowl, spoon, spatula, cutting board, rolling pin, grater, knife, pizza stone, spoons and 1 jar of Jordan’s BBQ Jam

BBQ Jam Pizza with Chicken and Red Onions

Preheat oven at 450F

Prize Pizza Dough (adapted from the Five Roses cookbook)—makes enough for two pizzas
1 pkg active dry yeast (or 2 1/4 tsp yeast)
1/4 cup lukewarm water
1tbsp sugar
1tsp salt
1tbsp shortening (or butter)
1 cup boiling water
1 1/2 cup all purpose flour
1 1/4 whole wheat flour
3tsp olive or vegetable oil

Soften Yeast in lukewarm water for 10 min. Place sugar, salt, shortening, and boiling water in a large bowl; stir until sugar dissolves. Cool lukewarm water; add yeast. Add 1 1/2 cups of flour and beat until smooth. Add remaining flour or enough to make a dough just barely firm enough to handle; knead until smooth on a lightly floured board. Divide ball into 2; knead each piece into a smooth ball. Flatten, then roll over pizza stone to the edges and a little beyond and make a quarter inch scallop the edge of the pizza all the way around. Let rise the dough rise for 15 minutes before adding toppings. If you prefer a thinner crust, add toppings immediately.

Toppings
4tbsp Jordan’s BBQ Jam
1 chicken breast, cut into 1/2″ chunks
1/2 red onion, sliced thinly
1/4 brick Mozzarella cheese, grated
handful of fresh basil

Heat 1 tbsp oil (high heat oil like canola or grape seed) in a frying pan at medium high heat. Saute chicken until browned on one side then add the thinly sliced red onion and saute until golden brown and caramelized. Set aside.

Brush the rolled out dough lightly with your favourite oil. Evenly spoon on a coating of Jordan’s BBQ Jam around the surface of the pizza; add chicken and onions evenly over top; add cheese. Sprinkle fresh basil over top.

Bake at 450 F for 20 t0 25min

Let rest for 5-10 min before eating (this is the hardest part of the whole process to do).
